Summary / Objective
The Sushi Sous Chef is responsible for the overall preparation and execution of menu items in partnership with the Executive Sushi Chef.
Essential Functions

Sets up assigned station to prepare for service
Maintains cleanliness and mise en place throughout service
Prepares all food items assigned to their station(s) with consistency and accuracy
Identifies and properly handles dishes for guests with allergies or dietary restrictions
Works collaboratively with Line Cooks, Prep Cooks, Dishwashers, and both FOH & BOH management
Ensures all culinary standards and service steps are upheld at all times
Notifies chefs of any delays or issues arising from assigned station(s)
Contributes to a memorable guest experience that encourages repeat business
Welcomes and acknowledges guests when applicable
Assists with cleaning, sanitation, and organization of the work area
Orders ingredients and supplies as directed by management
Cleans, sanitizes, and organizes all kitchen areas, walk‑ins, and storage spaces according to specifications
Physical Demands
Must occasionally lift and/or move up to 25 pounds
Must occasionally push and/or pull up to 50 pounds
Will spend over 4 hours daily standing or walking
Required Education and Experience
Excellent knife skills required
High school diploma required
Three (3) years of sushi chef experience preferred
Must be able to work clean, organized, and produce consistent product
