Position Summary

Our Line Cooks are the backbone of the Milo kitchen. This position is responsible for preparing high-quality menu items with consistency, efficiency, and attention to detail while maintaining the highest standards of food safety and cleanliness. Working in a fast-paced, scratch kitchen, you'll help bring our Oklahoma-inspired menu to life while contributing to an environment built on teamwork, professionalism, and culinary excellence.

Essential Responsibilities

  • Prepare and cook menu items using a variety of cooking techniques, including grilling, sautéing, roasting, frying, steaming, baking, and broiling.
  • Prepare ingredients for service by portioning, chopping, peeling, washing, measuring, mixing, and storing food according to recipes and production needs.
  • Set up and stock assigned stations before service and maintain organization throughout the shift.
  • Execute recipes with consistency while meeting Milo's standards for quality, presentation, flavor, and portion control.
  • Monitor food quality and cooking temperatures throughout preparation and service.
  • Properly operate and maintain kitchen equipment, including ovens, grills, ranges, fryers, and other culinary equipment.
  • Maintain proper food handling, storage, rotation, cooling, labeling, and sanitation procedures in accordance with health department regulations.
  • Wash and sanitize workstations, equipment, utensils, cutting boards, and food preparation areas throughout each shift.
  • Maintain clean and organized walk-ins, dry storage, prep areas, and line stations.
  • Monitor food waste and practice responsible portion control to support food cost goals.
  • Report equipment issues, maintenance concerns, or safety hazards promptly.
  • Work collaboratively with fellow cooks, chefs, servers, and hotel team members to deliver exceptional guest experiences.
  • Participate in ongoing training and continually develop culinary knowledge and techniques.
  • Follow all company safety, sanitation, and food safety standards.
  • Perform additional duties as assigned to support the success of the culinary operation.

Qualifications

  • Flexibility to work evenings, weekends, and holidays.

Experience

  • Previous line cook, prep cook, or restaurant kitchen experience preferred.
  • Experience in scratch kitchens or upscale casual dining is a plus.
  • Culinary education is welcomed but not required.

Physical Requirements

  • Ability to stand and walk for extended periods throughout the shift.
  • Frequently lift, carry, push, and pull up to 50 pounds.
  • Ability to bend, stoop, kneel, reach, twist, and perform repetitive motions throughout the workday.
  • Comfortable working in environments with frequent temperature changes, including hot cooking equipment and refrigerated storage areas.
  • Ability to safely operate commercial kitchen equipment and work efficiently during periods of high business volume.
